Chewy No-Bake Granola Bars

I love to cook, and thankfully I’ve been blessed with children who eat just about anything!  I try my best to make healthy meals and snacks for my family.  Many of the snacks that we buy at the grocery store are filled with ingredients that we can’t pronounce.  Obviously this is no good.  I’ve started to try making many of those snacks on my own so that we don’t have to buy them anymore!  Here is one of our favorite go to snacks that is incredibly easy to make. 

Chewy No-Bake Granola Bars


2 ½ cups Rice Krispies

1 ¾ cups oats (quick or regular)

¼ cup ground flax seed

½ cup additional mix-in (shredded coconut, chopped nuts, raisins, sunflower seeds, etc)

½ cup honey

½ cup brown sugar

¼ teaspoon salt

2/3 cup peanut butter

1 teaspoon vanilla extract

½ cup chocolate chips


*Combine first 4 dry ingredients in a bowl

*In a saucepan, mix the honey, brown sugar, and salt.  Over medium-low heat, stir until the mixture    comes to a complete boil for 30-60 seconds.

*Remove from heat and stir in the peanut butter and vanilla until smooth.

*Pour over the dry ingredients and mix well. 

*Let cool for 5-10 minutes before mixing in the chocolate chips.

*Press into greased 9x13 pan and let cool before cutting into bars.

This batch has the following nutritional values: Calories-4,450; Fat-179g; Cholesterol-0mg; Sodium-1,953mg; Carbs-683g; Sugar-255g; Fiber-59g; Protein-82g. For the additional mix-in ingredient I used walnuts. To determine the nutritional value of an individual bar, divide the above numbers by the number of bars you cut the batch into.
