Banana Oat Breakfast Cookies

If your house is anything like mine, getting the kids ready and out the door in the morning isn’t always the most fun task.  We all know that breakfast is very important, but sometimes it‘s hard to get the kids to sit down and eat before heading out the door.  My goal lately has been to make breakfast easily accessible for my kids so that they have some healthy options before heading off to school.  Their latest favorite is this recipe that I’d like to share with you for Banana Oat Breakfast Cookies.  They are very easy to make and have been a hit at our house.  I hope your family enjoys them as much as mine!

Banana Oat Breakfast Cookies

  • 1 1/2 cups oatmeal, quick or old fashioned ~ uncooked
  • 2 ripe bananas, mashed with fork until creamy
  • 1 cup unsweetened applesauce
  • 1/3 cup raisins, dried cranberries, or even a few chocolate chips
  • 1/4 cup chopped walnuts (optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (or more, to taste)

Preheat heat oven to 350 degrees.

Mix vanilla extract & cinnamon into the applesauce.

Blend applesauce mixture with all other ingredients & let sit for 10 minutes

Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds.

Bake approx. 20 - 30 minutes, or until golden & done.

Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack.
Store in a covered container when completely cool.
